I think part of the reason why no one talks about audio is that many gamers don't care about the technical quality of the sound, as long as it sounds 'good' to them. And if they don't have a 5.1 system that's set up well, they probably won't be able to tell the difference between that and a 2.1 system, making them care even less about the sound (and if they haven't experienced good bass, they'll probably even be happy with regular stereo). Even if they don't talk about sound too much, how many companies actually do support 5.1 surround in their games? I'd be surprised if most big-name, recent games don't support it since, like you said, good audio ties everything together, and the developers know that.
